Decorating With Antique Pioneer Plates

NAUVOO - Every time we see this decorating concept it always catches our eye and makes us look. We decided to set out to find a good sampling of the ones we like most. Old blue & red china is inexpensive in antique stores and even thrift stores. But many Latter-day Saint homes have some hand-me-down plates & platters. Instead of leaving them hidden in a cupboard for another 20 years - pull a few out and show grandma some love.

See if your family has some pieces of history in the way of china dishes or blue ware. This is a great way for kids to connect with their culinary ancestors and see family history.

Old Kentucky Buttermilk Pie

PIONEER PLATE: Among some of the specialty recipes found in the south is this delightful rendition of the buttermilk pie. It’s an easy recipe with a rich, down-home goodness.

4 eggs
3/4 cup sugar
2 tbsp. flour
4 tbsp. melted butter
1 tsp. vanilla
3 tbsp. lemon juice
Grated rind of 1 lemon
1 1/2 cup buttermilk (churned buttermilk is best)
1 pie shell, baked but not browned

Beat eggs and sugar together until light and lemon colored. Add flour and beat some more. Mix the butter, vanilla, lemon juice, lemon rind and the buttermilk, then add it to the egg mixture, pour into the pie shell. Bake at 375 degrees F for 20-30 min. Over baking makes it tough.


Pioneer Plate: Salt Lake City Cruz Family Guacamole Recipe

First introduced by Jorge Cruz at the Hotel Del Coronado in San Diego, CA in 1968, this recipe was put into a cookbook in Salt Lake City, Utah when the Cruz family moved there in 1983.

Ingredients

  • 3 ripe avocados 

  • 1 clove of garlic, minced 

  • 1/2 red onion, chopped 

  • 1/2 cup tomatoes, seeded and diced 

  • 1/2 cup cilantro, finely chopped 

  • 1 jalapeño pepper, minced 

  • Juice of 1 lime 

  • 1 tablespoon cumin 

  • 1/2 teaspoon of sea salt 

Instructions

  1. Cut the avocados in half and remove the pits. Reserve one pit and set aside. 

  2. With a spoon, scoop avocado from skins and mash with a fork. 

  3. Add the remaining ingredients and mix to combine.

PIONEER PLATE: There are few treats as timeless as Lemon Bars. Sister Kimball arrived at many church and social functions with plates of these delicious lemon bars. Before long she was selling them to local diners & restaurants. You’ll love these lemon bars.

Makes 2 dozen

1 (15 oz) can sweetened condensed milk
1/2 cup lemon juice
1 teaspoon grated lemon rind 
1 1/2 cups flour, sifted
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup butter, softened
1 cup dark brown sugar, firmly packed
1 cup oatmeal (uncooked)

Blend together condensed milk, lemon juice, and lemon rind; set aside. 
Sift together flour, baking powder and salt; set aside. 

Cream butter; blend in sugar. Add oatmeal and flour mixture and mix until crumbly. 

Spread half the oatmeal mixture in an 8x12x2-inch buttered baking pan and pat down. Spread condensed milk mixture over top and cover with remaining crumb mixture. 

Bake at 350 degrees F until brown around edges (about 25 minutes). Cool in pan at room temperature for 15 minutes, then cut into 1 3/4-inch squares. Chill in pan until firm. 

Pioneer Plate: Simple Buttermilk Waffles

Simple Buttermilk Waffles

2 cups sifted flour
1 Tbsp. corn meal
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1/2 cup vegetable shortening
1 3/4 cup buttermilk
2 large eggs

Sift the dry ingredients with the flour; mix in the shortening. Add the buttermilk and unbeaten eggs. Bake on a preheated waffle iron.

Northern California Huckleberry Cake

PIONEER PLATE: Summers in Northern California can be a dreamy vacation, but for those who live there it comes with generational traditions. This huckleberry cake is one of those traditions.

1 egg beaten
2/3 cup sugar gradually beaten into the egg until light.
2 tsp. baking powder
1 1/2 cups cake flour
1/2 tsp. salt
1/3 cup milk
3 tbsp. butter, melted
1 tsp. vanilla or almond flavoring
1 1/2 cups berries

Beat sugar and egg together until light. Sift together flour, baking powder and salt. Add the flour mixture to the egg mixture alternately with milk; beat well. Add butter and flavoring. Fold in berries. Pour into a greased 8-inch cake pan and bake at 400 degrees F for about 40 min. or until tests done.

Edna Huntington’s Buttermilk Lunch Biscuits
Makes 13 biscuits

1 1/2 cup flour
1 Tbsp. baking powder
1 Tbsp. sugar
1 1/2 tsp. salt
shortening the size of large egg
1 scant cup milk, divided use

Put Sifted flour, baking powder, sugar and salt together into a mixing bowl. Make a nest in the flour mixture, add most of milk, put in shortening, begin squeezing together the shortening and flour in the milk until thoroughly mixed, add rest of milk if needed and mix. Turn on to floured board, knead until consistency desired, cut into biscuits. Place on an un-greased baking sheet. Bake at 450 degrees F for 12 to 15 minutes, or until golden.

Pioneer Plate: SLC Women's Book Club Pecan Pie

Salt Lake City Women’s Book Club Pecan Pie

4 eggs, slightly beaten
1 cup golden Karo syrup (light corn syrup)
1/3 cup sugar
pinch of salt
1 tbsp. lemon juice or vinegar
4 tbsp. butter
2 tsp. vanilla
2/3 cup pecan halves
Unbaked pie shell

Mix the first 7 ingredients together thoroughly. Put pecan halves in an unbaked pie shell. Pour on the filling mixture. Bake 35 min. in a 325-350f degree oven.
